Ubuntu LTS, upgraded in place. Caddy in front of everything, because certificate renewal should not be a thing I think about. PostgreSQL where a database is genuinely needed and SQLite where it is not.

Editor

Vim, badly, for fifteen years.

Monitoring

A cron job and an email address. This is less of a joke than it sounds: the failure modes on one box are few enough to enumerate, and a dashboard nobody looks at is worse than a message that arrives.
